Fresh Radish And Jalapeño Slaw

Ingredients
- 2 limes or 1/4 C lime juice
- 1 jalapeño
- 10 medium sized radishes (1″ or golf ball sized)
- 1 small head of green cabbage / 8 C shredded
- 1/2 C cilantro or parsley
- 1 tsp salt
- 1/2 tsp pepper
- 2 Tb oil
Prep
- Thinly slice jalapeño. Add jalapeño to a small bowl and soak in the juice of 2 limes and set aside.
- Cut cabbage into quarters through the stem and thinly slice and dump into a large bowl for mixing.
- Thinly slice radishes and add to bowl.
- Rough chop Cilantro and add to bowl.
Directions
- Give the ingredients in the bowl a quick mix to roughly combine.
- Mix salt, pepper and oil into jalapeño lime mixture. After thoroughly mixing, pour over ingredients the large bowl.
- Mix till the cabbage is well coated. Recommend refrigerating for at least 1 hour prior to serving.

- Sub out equal parts Parsley for Cilantro for those that aren’t big fans or if that’s just what’s available.
- Easy to half the recipe if just using for a topping or cooking for less.
- Pro Tip: Use a mandolin for slicing jalapeño and radishes.
