Fresh Radish And Jalapeño Slaw

Ingredients

  • 2 limes or 1/4 C lime juice
  • 1 jalapeño
  • 10 medium sized radishes (1″ or  golf ball sized)
  • 1 small head of green cabbage / 8 C shredded
  • 1/2 C cilantro or parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tb oil

Prep

  1. Thinly slice jalapeño.  Add jalapeño to a small bowl and soak in the juice of 2 limes and set aside.
  2. Cut cabbage into quarters through the stem and thinly slice and dump into a large bowl for mixing.
  3. Thinly slice radishes and add to bowl.
  4. Rough chop Cilantro and add to bowl.

Directions

  1. Give the ingredients in the bowl a quick mix to roughly combine.
  2. Mix salt, pepper and oil into jalapeño lime mixture. After thoroughly mixing, pour over ingredients the large bowl.
  3. Mix till the cabbage is well coated. Recommend refrigerating for at least 1 hour prior to serving.

  1. Sub out equal parts Parsley for Cilantro for those that aren’t big fans or if that’s just what’s available.
  2. Easy to half the recipe if just using for a topping or cooking for less.
  3. Pro Tip: Use a mandolin for slicing jalapeño and radishes.
