Ingredients

  • 2 large chicken breasts (2 – 2 1/2  lbs)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cajun seasoning
  • 1 bay leaf

Prep

  1. Get out the slow cooker?

Directions

  1. Add chicken breast to bottom of slow cooker
  2. combine seasoning and sprinkle over chicken
  3. set bay leaf on top of chicken
  4. Turn slow cooker on high and find something else to do.
  5. Intermission (3 hours)
  6. After about 3 hours the chicken should pull apart easily with 2 forks.
  7. Turn off the slow cooker. Use two forks to shred into the juices.
  8. Let the shredded chicken rest for 15-30 minutes and it will absorb all of the liquid back.
  9. Enjoy!

Off Script

  1. If using as an ingredient for another recipe, add your favorite seasonings directly into the slow cooker in place of the cajun seasoning to cook into the chicken.
  2. For tacos, try a taco seasoning mix with, hot tomato sauce and diced tomato with chilis.
  3. Note: cajun seasoning often contains salt.
  4. If shredding is going slow try holding a piece of chicken in place with one fork and pull / flake off a bit at a time with the other.
  5. If the chicken isn’t easy to shred , let it go for another 15-20 minutes and try again.
