Shredded Chicken Without Trying
A super easy slow cooker shredded chicken that practically shreds itself. So juicy it is great on it’s own or a perfect foundation to any meal.

Ingredients
- 2 large chicken breasts (2 – 2 1/2 lbs)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cajun seasoning
- 1 bay leaf
Prep
- Get out the slow cooker?
Directions
- Add chicken breast to bottom of slow cooker
- combine seasoning and sprinkle over chicken
- set bay leaf on top of chicken
- Turn slow cooker on high and find something else to do.
- Intermission (3 hours)
- After about 3 hours the chicken should pull apart easily with 2 forks.
- Turn off the slow cooker. Use two forks to shred into the juices.
- Let the shredded chicken rest for 15-30 minutes and it will absorb all of the liquid back.

- If using as an ingredient for another recipe, add your favorite seasonings directly into the slow cooker in place of the cajun seasoning to cook into the chicken.
- For tacos, try a taco seasoning mix with, hot tomato sauce and diced tomato with chilis.
- Note: cajun seasoning often contains salt.
- If shredding is going slow try holding a piece of chicken in place with one fork and pull / flake off a bit at a time with the other.
- If the chicken isn’t easy to shred , let it go for another 15-20 minutes and try again.
