Ingredients

  • 1 Cup Cooked Rice
  • 1 tsp Vegetable Oil
  • 4 Poached Eggs
  • 1 Avocado
  • 1 Cup Cherry Tomatoes
  • Salt & Pepper to taste
  • Juice from 1 Lime

Prep

  1. Slice the cherry tomatoes into halves or quarters
  2. In a small bowl, season the tomatoes with salt and pepper.
  3. Add the juice from half the lime and set aside.
  4. Separately, slice the avocado into bite sized pieces and set aside.

Directions

  1. Start by heating 1 tsp of vegetable oil in a 10-12 inch skillet over medium-high heat.
  2. While the oil is heating, prepare your water for poaching the eggs.
  3. Add the pre-cooked rice to the hot oil. Partially cover the skillet to prevent any rice from popping out, and let it cook for approximately 5 minutes.
  4. Check the rice; it should start to turn golden brown underneath. If it does, flip it and cook for an additional 5 minutes. If not, increase the heat slightly and give it another minute before flipping.
  5. Poach your eggs, aiming for runny yolks that will naturally sauce the dish.
  6. Once the rice is crispy and done, divide it onto your plates. Top it with the sliced avocado and season with salt and pepper. 
  7. Next, layer the seasoned cherry tomatoes over the avocado. 
  8. Finally, place your poached eggs on top and squeeze the remaining lime juice over everything.
  9. Eat and Enjoy!
